My mother has been making this choc chip cookie for us ever since I can remember. We grew up with the kitchen always smelling of something baking in the oven and that something was very often these crisp delicious nuggets of nostalgia filled to the brim with shards of chopped up chocolate. Cos back then you made your own chocolate chips. We would swipe them up still warm from the tray, the chocolate still slightly gooey and the biscuit still just a little squidgy in the middle. Biting into these warm discs was just thee most satisfying feeling. And later once cooled and crisp, they were dunked in a glass of cold milk to be savoured a second time.
These cookies never lasted long in our house and my mom always had to make a big enough batch so that she could give half away to friends and neighbours. Nowadays I make them with slight modifications on my mom’s recipe. Less sugar for one, and I add nuts and other bits as the mood strikes. It’s a really simple recipe and it goes quite far as well. You can tweak it with whatever fillings you want to add and it will be great.
Try it this weekend. Your kids will love it and you may risk a cookie addiction but it will be so worth it…
Choc Chip Cookies
Ingredients
500g Self Raising flour (you could also use 500g cake flour with 2 tsp baking powder instead)
3/4 cup Brown Sugar
3/4 cup White Sugar
250g Butter
2 large eggs
1 tsp vanilla essence
1 cup choc chips (ready chips is fine bit I like to buy a slab of something decadent and chop it up myself
Method
Cream the butter and sugars together till creamy. Add eggs and vanilla and beat. Mix in flour and chocolate. This should make a soft dough. At this point pre-heat your oven to 180˚C.
Take teaspoonfuls of the dough and roughly shape into discs. Place on a greased tray with space between them as they will spread slightly. Bake for +- 10 minutes or till lightly golden.
Makes about 60 biscuits.
Note: If you don’t like too much sweetness, you can reduce the sugar a little.
Do choc chips only
Or mix them up with nuts, oats, coconut flakes or seeds of your choice.
My little one doesn’t normally like nuts. But he’s been gobbling these all week and loving it. Shhh….. I’m not telling him anytime soon…
