West Coast Snoek Braai

We’re ringing in Heritage Day with a true South African classic – Snoek Braai Weskus style. A very acceptable alternative to the other South African classic that is lamb chops and wors. This slightly sweet and savoury way of braaing (barbequing) snoek or cod for the rest of the world, is a firm local favourite. Serve up with potato salad, garlic paninis and grilled cheesy mushrooms and some #heritageday sunshine for the win.

West Coast Style Snoek Braai

Ingredients:
1 whole Snoek washed, patted dry with paper towel and lightly salted
2 tbsp apricot jam
1 tbsp butter
3 tbsp Worcestershire sauce
1 tbsp lemon juice
Cracked black pepper

Method:
Melt butter and jam together in microwave. Combine with all other ingredients. Brush over the flesh part of the Snoek liberally about 20 minutes before needing.
Braai flesh side down first for about 7-10 minutes and turn over onto skin side. Braai till just done and firm. You can brush during braaing with leftover marinade.
