Malawian cooking often incorporates ground peanuts. During my time there which now seems like a lifetime ago, I’ve had it in spinach which is surprisingly good and in a sweet corn side dish. The sweet corn dish is by far my favourite and it’s something I’ve now incorporated into my regular meals. It’s great to serve on the side of a protein like meat or chicken or even with spinach curry and rice. The recipe below is one I use that’s easy and fuss free. Sweetcorn in Peanut Sauce
4 yellow mealies / corn on the cob cleaned and cut into 4 pieces
1 Tblsp peanut butter
1 Tblsp oil
1 handful fresh coriander; chopped finely
1 medium onion; chopped finely

1 Tblsp ground garlic & ginger
3-4 chilies minced
4 tomatoes grated and skins discarded
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder

1 cup water
salt to taste

Method
1. Heat the oil in a medium size pot, add the onions, fry until golden.
2. Add the turmeric, coriander and cumin powders, cook till fragrant. Add the tomatoes, garlic, ginger and chillies, fry for about 5-8 minutes
3. Add the peanut butter and the corn. Mix until all the corn is coated by the sauce. Cook for a few minutes. Add the water, cover and simmer until the corn is cooked (10 to 15 minutes).
5. Add the coriander, just before serving. Enjoy
