The lockdown during Corona Virus has everyone baking and cooking more than usual. And for some reason, everyone has bananas going off that need to be used up. I peeked in my fruit basket and lo and behold, so do I.
Here’s my recipe that’s super easy, can be mixed together with a wooden spoon and has the added goodness of chocolate and pecan nuts. You can also follow the step by step video below. Enjoy and let me know what you think.
Choc Chip Pecan Nut Banana Bread
3-4 ripe bananas mashed
1/3 cup butter melted
3/4 cup sugar
1 tsp vanilla essence
1 tsp Bicarb
1,5 cups flour
1/3 cup choc chips opt
1/3 pecan nuts opt
In a bowl with a wooden spoon mix bananas and butter. Add egg, sugar vanilla and mix. Sprinkle over salt and bicarb and mix. Add flour, nuts, choc chips and mix through. Pour into a buttered loaf tin. Bake for 1hr at 175 deg C.
