Sheer khurma makes me remember Eid mornings when after mosque and breakfast all my cousins would congregate at my aunt’s house. There was always a jar of Sheer Khurma on the table which I enthusiastically looked forward to every Eid. That and the buzz of seeing all my cousins together dressed in our Eid threads and catching up albeit for just a few minutes before heading off to the next house to visit.
I’ve taken to making this wholesome beverage in my own home now and I hope you’ll try my recipe below.
Sheer Khurma

Ingredients:
1.5 l Full cream milk
1 tin Nestle Ideal Milk
2 sticks cinnamon
handful sultanas
4 Tbsp broken vermicilli
2 Tbsp flaked almonds
2 Tbsp slivered pistachios
1.5 tsp ground elachi
5 Tbsp sugar or to taste
Method:
Pour milk into a pot and bring to boil then simmer on low heat stirring occasionally. Meanwhile in a dry pan add the cardamom, cinnamon and vermicilli and braise on medium heat till the vermicilli is light brown. Remove to a plate. Add the nuts and sultanas to the pan and lightly toast the nuts. Add all the dry ingredients and the ideal milk to the pot and continue to simmer on low for about half an hour or longer till the vermilcilli is soft and the desired thickness is reached. When cold the milk also thickens. Enjoy hot or cold.
