Nandos Style Chicken

Recently I participated in a cook-off hosted by @thegreyblog in aid of feeding people in need. @rnbfamilyfoods and Nandos came on board and pledged R100 for every person who cooked along up to R20 000! It was great fun trying to follow along with the instructions via conference call and trying to host my first Insta Live at the same time. Yeah, not a great first Insta Live. But lessons learned and apologies to my followers whose questions I did not answer. I have permission to share the recipe we used. Please try it as it’s the closest you’re gonna get to the real Makoya.

Nandos Style Chicken

Ingredients:
1 whole chicken cut into 4
2 cloves garlic
1 lemon cut into wedges
20 ml tomato sauce
30 ml plain yoghurt
50 ml Nando’s hot sauce
20 ml mayonnaise
40 ml oil
1 teaspoon Cajun spice
1 teaspoon rough salt
200 ml boiling water


Method:

Step 1
Skin the chicken
Cut chicken into 4 pieces

Step 2
Half fill large pot with water
Bring water to boil
Add 1 teaspoon Cajun spice
Add 1 teaspoon ground salt
Now add 4 pieces of chicken
Allow to boil for 7 minutes
Remove from water and allow to cool

Step 3
Place the following ingredients into a blender and purée – 2 cloves garlic
– 20ml tomato sauce – 10ml oil
– 30ml plain yoghurt
– 50ml to 100ml Nando’s hot sauce – 20ml mayonnaise
– juice from 1 or 2 lemon wedges

Step 4
Switch on the flame griller and allow to heat up for 10 minutes. (We braaied it on a fire as no griller.)

Step 5
Place large saucepan on stove on medium heat
Add 20ml of oil
Add the Purée sauce
Place the 4 pieces of chicken into the sauce after they have cooled down.
Close saucepan and allow to simmer for 5 minutes
Open lid and toss the chicken in the sauce
Close the lid of saucepan and allow to simmer for further 5 minutes

Step 6
Take the chicken directly from the saucepan and place on the flame griller
Use the sauce from the saucepan to baste the chicken every 3 minutes for a total of 12 minutes
Turn the chicken on the griller every time you baste it.

Step 7
Remove the chicken from grill and serve with hot spicy chips and Coleslaw.
