Pudding for breakfast? Yes please!!!
Overnight oats are a firm favourite for me and I love how refreshing it is straight out of the fridge in summer. This chocolate version paired with chia seeds is literally like having the most decadent chocolate pudding for breakfast. Hell, top this with some softly whipped fresh cream and you literally can serve this as dessert. Make it the night before and have sweet dreams in anticipation of your breakfast bliss.
Chocolate Chia Oats Breakfast Pudding

Ingredients
1/2 cup rolled oats
1/2 cup double cream yoghurt
1/2 cup milk or coconut milk
1 Tbsp chia seeds
1/2 tsp vanilla essence
1 Tbsp good quality cocoa powder
1 Tbsp honey
Method
Mix it all together in a bowl or jar. Cover and pop in the fridge overnight. Serve the next morning with a little extra milk as it becomes thicker. Add toppings like banana, nuts, coconut flakes, strawberries or just have it neat! Don’t forget to do a happy dance. It’s that good!
