Spinach and Zucchini Fritters

My weekends don’t normally include afternoon tea but on a Saturday with time on my hands I whipped up a batch of these yummy Spinach and Zucchini fritters that even my munchkin enjoyed. Served with some double cream yoghurt it’s a perfect afternoon snack or savoury for Ramadaan.

Spinach and Zucchini Fritters

Ingredients:
Big handful spinach leaves, finely shredded
5 Baby Marrows grated
1 Green Chilli finely chopped
1 handful fresh Dhanya chopped
3 Tbsp Channa (Chickpea) flour
3 Tbsp Cake flour
1 egg
1/2 tsp Baking powder
1/4 to 1/2 cup water
3/4 tsp Ground Dhanya (Coriander)
3/4 tsp Ground Jeera (Cumin)
1/2 tsp Chilli powder
1/4 tsp Hallad (Turmeric)
1/2 tsp Salt

Combine all dry ingredients in a bowl. Add the egg and a little bit of water at a time to create a batter that is of dropping consistency. Drop about a teaspoon full at a time into shallow hot oil and fry on medium to high heat on both sides. Remove to a wide hole colander or drain on kitchen paper before serving.
