Easy Butter Bean Curry

“Huiskos” (home food) is the food you turn to when you’re running late, out of ideas or simply seeking comfort. This warm and tangy Butter Bean curry is one of my favourites and done in 30 minutes. Keep it close cos’ you’ll be making this one often.

Easy Butter Bean Curry


1 large onion chopped finely
1 tin Butter Beans, do not drain
1 tsp Rajah curry powder hot
1 tsp Packo Roasted Masala
1 tsp Chilli powder
1 tsp sugar
1 tsp vinegar
1 50g sachet tomato paste (about 2 Tbsp)
1/2 green pepper cut into short strips
a few curry leaves


Saute onions in a little oil on medium heat till they are soft and translucent.
Add spices and braise till fragrant, then add tomato paste and cook for about a minute stirring.
Add Butter beans with the brine from the tin. Refill the tin with water and add that too.
Add the rest of the ingredients and simmer for 5 to 10 minutes.
Season with salt if needed. I find the tinned beans often have enough salt.

Serve over white rice with paper and pickles on the side or with fresh hot rotis.
