August 19 is National Potato Day. Granted it’s in the USA, but no matter. Why quibble over frivolous social media technicalities when you don’t really need a reason to celebrate the star or all vegetables, the humble, yet amazing Potato. And if you think that’s cheesy, let’s load on some more cheese for the most deliciously hearty cheesy potato bake ever. Filled with cream and studded with layers of robot peppers.

Cheesy Potato Bake
Ingredients
6 to 8 large potatoes peeled and sliced about 3-5mm slices
1/2 each red, yellow and green peppers diced.
1/2 red onion chopped
250ml cream
1 packet white onion soup powder
1 cup grated cheese
Method
Preheat oven to 180˚C. Layer half the potatoes in a casserole. Top with half the peppers and onion. Season lightly with salt n pepper. Sprinkle half packet of soup powder over, pour half the cream over and some of the cheese. Add a second layer of potatoes and repeat as before. Top with all the remaining cheese. Cover with foil. Bake for about an hour. Remove foil at the end for the last 5 minutes or so to grill the cheese a bit.
Serve hot as a braai side or with roast chicken or meats.
