When you want a meal that’s filling while reducing your carb intake, a portion of salmon and veggies always does it for me. The healthy fats in the salmon keeps you full without needing bread or rice as part of your meal. I like changing up the flavours I use with the salmon to make it interesting. This recipe uses lemon zest and soy sauce for a fresh and slightly Asian spin.

Lemony Baked Smoked Salmon Trout
- 600g Smoked salmon trout fillets, skinned and deboned (You could also use Norwegian Salmon)
- salt and cracked black pepper
- 2 Tbsp soy sauce
- 4 Tbsp olive oil
- 1/2 lemon zested
- 2 Tbsp lemon juice
- 1/2 tsp chilli flakes or to taste
Preheat oven to 180˚C. Drizzle some olive oil on a baking tray. Place salmon on tray. Season with salt and pepper. Mix last 5 ingredients in a bowl and pour over the fish. Bake for 12 to 15 minutes.
Serve immediately with a fresh salad and sweet potato crisps or wedges.
