In honour of World Pasta Day which falls on October 25 every year, we pay tribute to one of the most versatile staple foods ever. In celebration, I am sharing this easy Chicken Chow Mein recipe from one of my contributors, Munira Allie.
Chicken Chow Mein
Ingredients:
2 tblsp Butter
2 Green Chillies
1 Onion (Cut onion into 8 and then separate the layers)
4 Medium Sized Chicken Breasts cut into strips
2 tsp BBQ Spice
1 tsp Black Pepper
1 Tblsp Garlic n Ginger
1 tsp Red Chilli Flakes
2 tsp Chicken Spice
1 heaped tablespoon Khai Thao Home Red Chilli Paste
1 Red Pepper cut into strips
3cups Chopped Cabbage
1½ cup Julienne Carrots
3 cups Chopped Spinach
500gr Cooked Egg Noodles
½ Cup Dark Soya Sauce
¼ Cup Light Soya Sauce
1 Cup Khai Thai Sweet and Sour Sauce
Spring Onions to garnish
Roasted Cashews to garnish
Toasted Sesame Seeds to Garnish
Method
Melt butter. Add green chillies and fry for a minute. Add onions and braise till pink. Add the chicken, garlic and ginger, BBQ spice, black pepper, chillie flakes, chicken spice and the red chilli paste. Cook till chicken is almost done. Make sure it does not stick so add water as needed but not too much. Add veggies and cook till cabbage and spinach are reduced. Do not cook them too soft as veggies should maintain some crunch. Add cooked noodles and sauces and reduce heat. Cook for 15 minutes. Garnish with spring onions, cashews and sesame seeds.
If you have Hoisan Sauce, then add a tablespoon when you add the noodles. It rounds the dish off perfectly.
