If you ever wanted to wow your guests with something a little different, these cheesy stuffed mushrooms is the shizznizz! as my friend Puva would say. Scrumptious umami bites, flavoured with garlic, herbs and topped with cheesy goodness. It’s a great starter or braai (barbeque) side and you won’t have any left over, they’re so good.
I usually eyeball my ingredients and add as I need, so the below amounts can be adjusted as you prefer.
Cheesy Stuffed Mushrooms
Ingredients
2 punnets of large brown mushrooms
2 cloves garlic chopped finely
1 cup cheddar cheese, grated (you can mix this up with mozzarella if you like. I prefer cheddar for this as it has more flavour)
100-125g firm butter
handful of fresh coriander or parsley, chopped
Method
Clean the mushrooms with a paper towel. Carefully remove the stems and chop them up finely.
Mash your butter with a fork. Mix in the garlic, chopped mushroom stems and herbs. Season with salt and crushed black pepper.
Place them on a roasting tray and top with grated cheese.
Bake at 180 degrees Celcius for about 20-25 minutes till the mushrooms have softened and the cheese is melty. Enjoy while it’s hot, cos no-one likes cold melted cheese 😄
