Like most people I love bread, but it’s so bad for me. More and more people are finding benefits to reducing bread or cutting it out from their diets. I’m even needing to cut out yeast or any kind of raising agent in my food. It’s been a real toughy.
And then I found this lifesaving (ok, I exagerate) recipe for Brazilian Cheese Bread. I first saw it on the @chocolates_and_cheesecake instagram page but have found the same or very similar recipe on other blogs online too. These little bready muffins are so simple and made with Tapioca flour, eggs and milk. Being Gluten Free and Raising Agent Free, they are a great substitute as they still have a bready texture, crisp outside and soft inside.
You need a blender to mix it all up and they’re done and baked in 30 minutes.
Brazilian Cheese Buns
1 1/2 cups Tapioca flour
1 egg
3/4 cup milk
1/4 cup olive oil
1/5 tsp salt
1/2 cup grated cheddar cheese
Preheat your oven to 200 degrees C.
Blits it all up in a blender stopping once or twice to scrape down the sides. Pour into a greased 12 cup muffin pan. Bake for 20 minutes till the tops are golden.
These buns are savoury are go well with any savoury toppings. I like smoked snoek pate or even smoked salmon cream cheese. Unless you’re a cheese and jam kinda person. Then apricot jam would be your Jam…
