
There’s something about warm luscious custard dripping down a soft and luscious cake that almost makes you thankful for the cold weather. The cold Winter days are almost over, but while there’s still a nip in the air, let’s squeeze in this comforting warm Ginger pudding recipe.

Ginger Pudding

Syrup:
1 cup sugar
2 cups boiling water
Method:
Bring to a boil BUT do not allow to thicken
Cake:
1 cup sugar
1/2 cup melted butter
1 egg
1 tablespoon apricot jam
1 teaspoon bicarb
2 tsp ginger powder
1 1/2 cups self-raising flour
1 cup milk
Method:
Beat sugar and butter together. Add egg and beat. Add dry ingredients and milk and mix well. Place syrup in a greased pyrex. Pour the batter over the syrup and bake at 180 deg for about 30mins. Serve with warm custard.
