Masala Fried Fish Roe (Kuite)

Most people with a love for seafood will simply relish tucking in to a delicious dish made with fish roe. I recently shared my recipe for fish roe curry and promised I’d share a version that is fried as well. Here is my recipe for Masala fried fish roe. A somewhat dry version usually served on the side of a light curry like Dhal or Khurri with rice in our Kokni home.

Masala Fried Fish Roe (Kuite)

Ingredients

300-400g of fish roe
1/2 tsp fine turmeric,
1 tsp Jeera (cumin),
1/2 tsp fine coriander,
1/2 tsp chilli powder or to taste
1 tsp salt,
1 tsp crushed garlic
a squeeze of fresh lemon juice

Method

Rinse fish roe in water with a tablespoon of vinegar. Gently pull off the stringy bits attached to the roe. Cook in a saucepan with a little bit of water till they are opaque and just firming. Remove and set aside.
Add all the spices and lemon juice to the roe and rub gently all over.
Fry in shallow oil on low heat turning to cook all sides. Partially cover or use a splatter cover as the oil splatters a lot when frying fish roe. The roe is cooked when it is firm to the touch. You may need to break open one of the thicker pieces to check that it is not still slightly pink in the centre.
Remove to a wire strainer or paper towel to drain excess oil.
