A tropical paradise in a glass! This gorgeous coconut tropical fruit chia pudding is perfect for breakfast, or even an option for sehri during Ramadaan.
It’s so bright and colourful, it’s sure to be a natural mood booster. And let’s not forget about those little chia seeds – they’re like tiny powerhouses of nutrition. The chia is filling and the summer flavours are just divine. Make sure you make this before all the summer fruit are gone.
Tropical Fruit Chia Pudding Breakfast Parfait
Soak 1 Tbsp chia seeds in 1/2 cup coconut milk at least 2hours or overnight.
Top with chopped mango.
Then use a stick blender or add to a blender jug and blitz 1/3 cup each yoghurt, pineapple, frozen banana, frozen blueberries, 1 tsp collagen (I used @pomegranate_wellness) and a splash of milk (I used @buttanuttspreads Oat milk).
Top the mango with the mix.
Dig in and listen for the sound of angels from heaven. 😇
