Easy Fruit Salad

One of the best things about summer is the selection fresh fruit available, and one of the best things you can do with them is make a deliciously colourful fresh fruit salad. Sure you can buy your fruit salad, but the best ones are always home made.

This easy recipe uses honey and lemon juice for a punch of extra flavour. While the recipe also uses sugar there’s no need to make a sugar syrup. Make sure you add this recipe to your list of summer must haves.

Easy Fruit Salad

400g fresh strawberries, cut in to quarters
½ fresh pineapple, peeled, cored and cubed (approx 2 cups cubed)
2 cups grapes
1-2 cups blueberries
2 kiwis, peeled and sliced
2 mangoes, peeled and diced

2 Tbsp honey
Juice of 1 lemon
4 Tbsp Sugar or to taste

Wash, dry and prepare all your fruit and add to a large bowl big enough to mix comfortably without squashing the fruit. Drizzle over your honey, lemon juice and add the sugar. Mix gently and allow to stand for an hour or 2 before serving. You could serve this with cream or ice cream but the honey and lemon adds so much extra flavour it’s delicious on it’s own.

Tip: Add chopped mint for a different dimension.
