This Cajun Salmon and Savoury Rice is fairly quick to prepare and will take a weekday dinner to the next level.
Cajun Salmon and Savoury Rice
Ingredients
Salmon:
300g Salmon cubed
1-2 Tbsp Cajun Spice
2 cloves garlic minced
Juice of half a small lemon
1/2 tsp salt
1/2 tsp Course black pepper
dried red chilli flakes to your liking
Mix all above ingredients and keep aside.
Savoury Rice:
2 cups plain white rice, Jasmin or Basmati, rinsed 3 times
2 cups frozen mixed veg
1 tin tomato and onion mix
1 small onion chopped
3 Tbsp Spice for Rice (Robertsons)
1 tsp paprika
2 tsp salt
Method
Add the chopped onion to a large pot or deep pan with about 3 Tbsp oil and sauté on medium till translucent.
Add the spices and stir for a minute or 2.
Add mixed veg and tomato and onion mix and allow to cook till pulpy and tomatoes have broken down a bit more. About 10 minutes or more.
Add the rice and 3 cups of water. Stir through, close the lid and allow it to come to a boil on high. Boil for 5 minutes. Stir again gently.
Turn the heat down to medium and simmer for 10 minutes.
Turn the heat down to very low and steam for 10-15 minutes.
If rice is not soft enough then sprinkle on some cold water and let it steam a bit further on the switched off hot stove till ready.
While the rice is steaming, heat a Tbsp of butter and 2 Tbsp olive oil in a pan. Add the salmon and stir fry for a 5 to 10 minutes till just cooked.
Serve on top of the rice with a sprinkle of fresh coriander. The rice is really moist so we didn’t need any other sauces with this. Enjoy.
