I recently got tired of wanting to cry everytime I stepped on the scale… so I decided to put myself on a diet for the sake of my sanity, self esteem and my sense of self preservation.
This diet is based on eating lots of whole healthy fruit and veg, lean protein and specific spices to boost your metabolism. There’s very little carbs, which I’m struggling with, but it’s not gone altogether. One of the healthy snacks I can incorporate in-between meals is a combination of dark chocolate, blueberries and almonds. I decided to make it into a healthy chocolate bark, which makes you feel like you’re actually having a treat.
The blueberries are fresh so this won’t keep longer than 2 or 3 days in the fridge. Although this one portion won’t last the hour…. lol.
Healthy Chocolate Bark
This portion is 1 serving.
Ingredients:
½ cup blueberries
¼ cup almonds
28 grams 70% dark chocolate (this is about 3 blocks of Lindt)
Method:
Wash and dry your blueberries.
Roughly chop your almonds.
Slowly melt your chocolate in the microwave on medium heat in 30 second intervals or over a double boiler.
Pour the chocolate onto a sheet of baking paper. Reserve about 2 teaspoons.
Sprinkle the blueberries and almonds on top while the chocolate is runny.
Drizzle the last bit of chocolate over the top.
Allow to set in the fridge till completely firm, then cut up or break into big shards.
Store in fridge as the blueberries are fresh.
