Peri Peri Braai Chicken – the quick version

This braai chicken recipe is designed to speed up the process of getting your food to the table. Chicken takes a bit long to braai so I use my Instant Pot to pre-cook and then it only takes about 10 to 15 minutes on the coals.

Ingredients:
4 chicken quarters, well rinsed and drained
1 tsp crushed garlic
juice of half a lemon
2 heaped Tbsp plain yoghurt
2 heaped Tbsp mayonaise
4 Tbsp peri peri sauce of your choice
1 teaspoon paprika
1 teaspoon salt

Method:
Make 2 or 3 slits in each chicken quarter so the marinade can penetrate.
Mix all marinade ingredients and coat the chicken pieces.
Leave to marinate for an hour or 2. Longer if possible.

You can put this directly on your braai but steaming it in the Instant Pot is always a bonus.

Put your trivet in your instant pot. Add about a cup of water. Water must be just under the trivet.
Pack your chicken pieces on to the trivet.
Close the lid and set to 6 minutes on Pressure Cook. Allow for natural pressure release before removing and put it on the braai for about 10 minutes. Brush with leftover marinade while braaing.
Serve hot with crusty bread and salads.
