I first had Mexican corn on the cob at The Fourways Farmer’s market from a vendor called Mestizo. It was the first time I’d had corn this way and I was immediately hooked. The tangy spicy sauce and salty feta was utterly delicious with the sweetness of the corn. I had to try my own version and this recipe was a winner for the whole family. This makes a great braai side, so make it when you’re planning a braai and have the fire going. Or if you have a counter top griller that could work too.
Mexican Corn on the Cob
Ingredients:
4 ears of corn (mealies), shucked
2 Tbsp salted butter, melted
3 Tbsp mayonnaise
2 Tbsp lemon juice (lime juice will give a more authentic flavour if you can get them)
1 teaspoon ground cumin
50g Feta cheese (approx)
chili flakes
fresh coriander, chopped
Method:
Parboil the corn in salted water till just done.
Mix mayo, lemon juice and cumin.
Grill your corn for 7-9 minutes on a braai till slightly charred.
As soon as you’re done grilling, brush the cob with the melted butter and then with the mayo mix.
Sprinkle with Feta cheese, chili flakes and chopped coriander and serve while hot.
