Maize Meal Drop Donuts

A staple food for most South Africans maize meal forms the basis of many a hearty and filling dish. From mealie meal pap (porridge) in the mornings for breakfast, to pap and smoor (relish) on the side of braaied meats.

Due to its nature of being very satiating it forms the basis of many food parcels distributed by aid organisations to those in need. Ashraful Aid is one such organisation. They feed over 200,000 people through their Food Meal Programme known as Donate a Plate! Maize Meal Drop Donuts

These mini donuts don’t need yeast or rising time like normal donuts. They are little heavier but have a crispier outer coating due to the maize meal.

Ingredients

200ml milk
200ml water
2 cups Maize Meal
2 cups flour
2 eggs
5ml salt
10ml baking powder
1 cup sugar

For coating, combine
30ml sugar
30ml ground cinnamon

Method

In a bowl, combine the milk, water, Maize Meal, flour, eggs, salt, sugar and baking powder. The batter should not be runny but not too stiff. It should be able to drop off the spoon into the oil. If it feels too loose, add extra flour a little at a time.
In a separate bowl, mix the sugar and cinnamon together. Heat oil for deep frying to medium heat. Test the oil by dropping a spoonful of batter in the oil. It should bubble, but must not colour too fast as it needs to cook through. Fry off all the doughnuts by scooping batter on a tablespoon, then using another spoon to drop it in the oil. Fry until golden and cooked through. Allow them to drain on paper towel as soon as they come out of the oil.
While they are still warm but not hot, toss them through the cinnamon sugar.

Pro Tip: These are best served warm with a sauce like toffee, chocolate or custard as they get a little stiff due to the maize meal once cold. Although some may like it like that…
