Lazy Cat Cake Viral Dessert

This viral dessert pioneered by Kuwaiti chef Ahmed Alzamel, has effectively replaced the Dubai chocolate craze from last year. I was bound to lose my foodie stripes if I did not try it so here’s my version using store bought cake which makes it a no-bake version.

The layers of chocolate cake, cream cheese, ganache and crunch from the puffed rice on top give you all the right textures. This dessert is what chocolate dreams are made of. I cannot abide soggy cake which is why I don’t eat or make trifle, so I left out the chocolate milk step. You can add it in if you like but for me the dessert did not lose a thing without it.

You can make this in one dish or individual bowls like I did.

Lazy Cat Cake

Ingredients

4 ready bought chocolate muffins.

Cream Layer
250ml Cream Cheese
200ml Fresh Cream
6 Tbsp Condensed milk

Ganache Layer
80g chocolate
80ml fresh cream

2 cups chocolate coated puffed rice (like Coco Pops)
60g chocolate
1 Tbsp cocoa powder

Method

Break up the muffins into chunks and layer in 6 pudding bowls. You can pour some chocolate milk over the cake at this stage if using. I left it out.

Whip together the cream cheese, condensed milk and cream till soft and fluffy. Top the cake layer with the cream.

Warm the cream gently just till small bubbles start to form at the edges. Pour over the chocolate. Allow to stand for a minute then stir to form a smooth ganache. This needs to be runny so you can add a little more warm cream if needed. (Ganache can also be made with milk instead of cream). Spread this over the cream cheese layer.

Combine the chocolate, puffed rice and cocoa in a bowl and spoon over the top of the ganache. Only add the puffed rice just before serving so it doesn’t soften.
