A toasted sandwhich on the side of a smooth soup like Roasted Tomato or Spicy Butternut is the perfect accompaniment. It adds texture and crunch and also makes the dish filling so you’re not left with that hole in the stomach after a bowl of soup. I recently shared a Spicy Butternut Soup which I served with a cheesy spinach toastie. Here’s how easy it is to make.

Spinach and Cheese Toastie
Combine 2 handfuls of grated mozzarella with 1 handful of cheddar and a handful of chopped baby spinach. Add your favourite herbs, I added garlic and herb spice.
Top your favorite bread with this mix, I used sourdough, and airfry for 5 minutes till just browning on top.
You can do this in a normal oven or a pan on the stove on medium heat with a lid on to melt the cheese.
