Ingredients
500g beef mince
1 onion ground very fine
1 tsp smoked paprika
1 tsp cumin powder
1 tsp garlic and ginger paste
1/2 tsp chilli flakes or to taste
1 tsp salt
a big handful of fresh parsley chopped
1 tsp oregano
2 Tbsp yoghurt
2 Tbsp olive oil

Method
Grind your onion very finely in a food processor or blender. Add all other ingredients and mix in the processor. I did all this in my Tokit Omni Cook but this can be done by hand in a bowl as well.
Split the mixture into 3 and roll between 2 sheets of baking paper till about 2mm thin. You can use wet hands to pat this out to the edges as well.
Roll up the mince into the paper and bake at 200˚C for 20 minutes. Halfway through, pour off the water that collects in the tray.
Remove from paper and break up the meat. Drizzle with lemon juice and return to the oven to char a bit or use as is.
Use in Pitas, laffa or any kind of wrap with sauce like tzaziki or hummus as a base.
