Akhni - the stuff of Jumuah lunch dreams.
This traditional Indian rice and meat dish, is right up there with every global comfort food you can think of. I don’t know anyone whose eyes do not glaze over at the thought of a deg of wedding Akhni, cooked over a wood fire and served with copious dollops of spiced dhai. This is our basic family recipe that I hope you’ll enjoy. #SaveItForSunday

Akhni
Ingredients 800g Mutton Stew pieces washed and drained 2 cups Jasmine/white rice rinsed 3 medium potatoes cut into big chunks 2 large onions finely chopped 2 medium tomatoes grated 2-3 Tbsp ghee or oil 2 sticks cinnamon 3 pods elachi (cardamom) 1 Tbsp garlic & ginger 1,5 tsp ground dhanya (coriander) 1,5 tsp ground jeera (cumin) 1/2 tsp turmeric 1 tsp chilli powder 1/2 tsp crushed red chilli flakes 1 tsp Akhni masala (optional) 2 green chillies big handful of fresh coriander chopped

Method Add ghee to a large pot on medium heat. I prefer not to use a stainless steel pot for akhni as it burns more easily than aluminium during the steaming process. I would suggest an aluminium pot or a heavy non-stick if you have. Add whole spices and allow to sizzle then add the onions. Saute until starting to brown.  Add the meat and the garlic & ginger. Allow to cook slowly till the meat is just tender about 45 minutes. This can take longer depending on the meat. Add 1,5 tsp salt halfway through. Add a little water if it’s sticking. Add the spices and green chillies and braise for a minute then add the tomatoes and allow to cook for 10 minutes stirring now and then to prevent sticking. Add 2 cups of water and the potatoes and allow to cook till the potatoes are half cooked.  Add the rice, 2 teaspoons of salt and the chopped coriander and stir through to mix thoroughly being careful not to break the potatoes. Cover with a tight lid or first cover the pot with foil then the lid to create a tight seal. Steam on the lowest heat on your stove for about 20 minutes or until the rice is cooked through. You can also steam on medium on the stove for 5 minutes and then in the oven on low.  Serve with paapar and chai.

No trip to Turkey is complete without experiencing a trip to the Hammam. It turns out humankind has for centuries cherished the idea of communal bathing and as a matter of fact, found comfort and pleasure in making it a time for socializing. In my modern mind of shower cubicles and bathroom privacy, it’s quite a mind shift to bathe in public. Ancient Constantinople (now Istanbul) then the centre of the Eastern Roman Empire had a strong Hammam culture. Istanbul now has Hammams on literally every corner.

Both my husband and I had a Hammam experience separately on our trip to Turkey last month. I gently nudged (read strong-armed) Zulfikar to write about his experience and I added a little of my own from a women's perspective. We cover the whole process including modesty issues. In Islam, Women are Equal! The Prophet SAW spoke about the importance of women. He celebrated their uniqueness & applauded them for their contributions, hard work & strife in raising families & their contributions to society. He strongly abhorred women being ill-treated & was an enforcer of their rights. After all, the first person to embrace Islam was a woman; Khadijah (R.A), the greatest scholar of Islam was a woman; Ayesha (R.A) & the person who loved the Prophet the most was a woman; Fatima (R.A).

Whilst Islam honours women, today's western society portrays them as voiceless, confusing what culture dictates with what Islam actually commands. The Quraan & Hadith should be the ONLY guide.

Islam teaches us equality including gender equality. If we were not equal, then the way we worship would've been different for men & women. In Surah 9 Verse 71, Allah says, “The men believers & the women believers are responsible for each other. They enjoin the good & forbid the evil, they observe prayers & give charitable alms and obey God and his Prophet.” This verse shows us that whether you are a man or a woman, your responsibility to uphold the Islamic teachings remains the same.

Under Islamic laws, women have the right to buy & sell property, run businesses, demand their dowry at any point during their marriage, vote & take part in all aspects of politics & society. The Prophet SAW advocated for equal access to education. One the most notable examples of a highly educated woman back then would be Fatima (RA).

Today is National Women’s Day, a day celebrated in South Africa which commemorates the march to Parliament by a group of strong & resilient women.

But when I look at Women’s Day, I not only see the plight of South African woman, but of plight of ALL women. As a Muslim woman, I can see to it that I use my voice to speak up for my Muslim sisters who are enduring hardships. Overcoming adversity can only be accomplished if we all do our part to educate & facilitate. In the words of Mother Teressa, “I alone cannot change the world BUT I can cast a stone across the waters & cause many ripples.”

Do you give much thought to the traditional foods

Do you give much thought to the traditional foods we make for Ashura and what each dish means?

During the first 10 days of Muharram several traditional foods are made. These include Malido, Khitchri, Raut and Sharbet a sweet drink made with water.

Each of these dishes stem more from cultural tradition rather than holding a solid Islamic significance. There is no proof or evidence that these were foods made as an act of Sunnah. Many of them are made today in commemoration of the hardships that the Ahlul Beit (the prophets family) experienced before they were martyred at Karbala.

Khitchri- The 10th of Muharram is the day Nabi Nooh AS (Noah) came to rest on Mount Arafat in Armenia, now known as Turkey, after the 40 days of rain and floods. He found all the dhals (lentils) in the vicinity, collected them and made Fatiha as shukr (thanks). Today we make Khitchri (rice with dhal) on the 7th night of Muharram in remembrance.

Malido- is made to signify the desert (sand). It was originally made by steaming rice flour and when cooled removing lumps and adding ghee, fresh coconut and sugar. Today we make it with semolina, sugar and butter.

Raut- This is a dry cake made with semolina. It started in India 800 – 900 years ago. It symbolises the dry vegetation or stones that Sayyiddina Hussain RA and his family had to endure. Raut, malido and water would be traditionally eaten as a staple diet for 10 days in commemoration.

Sharbat- made with rose syrup and water is made to signify the thirst of the Shuhada e Karbala (martyrs of Karbala) when there was no water.

Some make fish during the 7th to 9th Muharram because fresh fish wasn’t available back in the day. Dried fish was used to make fish curry.

There are worse ways to remember auspicious times in our history than with food. As long as we acknowledge that they stem from tradition and not religion. And to also be mindful that these are not days of celebrations and festivals but to remember them in a sober manner with the respect that they deserve.

It is worth saying that true fine dining is not merely about plating steak and chips to make it look posh. It is about being creative in the entire process of the meal.
