Sun, sea, beach sand and pizza. That is probably one of my favourite combinations and while the sun is still out and the weekend is loading, I think it's the perfect activity for the family. Ciao Pizza is now also in Bloubergstrand, which means you can grab your pizza and enjoy it at the beach with your toes in the sand. They serve authentic Neapolitan style pizzas and calzones. So you’re living dangerously and trying out the latest Turkish/Moroccan/Syrian hotspot in town. The reviews are spectacular and their instagram page is simply mouthwatering. You can’t wait to get stuck into a new foodie experience and the excitement builds as the waiter seats you and brings over the menu. You open it up and turn the pages with great expectation and you’re…… stumped!

I can’t tell you how many times I’ve gone to a middle eastern restaurant and just been too confused to make a decision. Sometimes waiters are a great help but often there is a language barrier or not enough knowledge. It can be frustrating.

In the last 3 years in South Africa there has been an influx of Turkish and middle eastern eateries. This is great for the Muslim market as most of them are halaal. But deciphering the menu… eish! So I’ve compiled a list of common menu items and terms to help you along your food journey. A Google for foodies. Let’s call it… #Foodle.

I’ll kick off with Turkish and Syrian. I’ll do a series of these posts and will do Moroccan and even Indian. Do tell me what other cuisines you’d like a Foodle for and I’ll work on it for you guys.

Common Terms
Meze – A selection of small dishes served as appetizers
Tahini – Ground sesame paste
Hummus – Dip made with blended chickpeas, tahini, garlic
Shawarma/Doner Kebab – The term shawarma actually refers to the meat and not the wrap. Meat or chicken cut into thin slices, stacked, and roasted on a slow-turning vertical rotisserie

Turkish
Tavuk – Chicken
Et- Meat
Kavurma – Sautéed meat with peppers and spices
Adana kebab – minced meat mixed with chili on a flat wide metal skewer

Syrian
Dajaj – Chicken
Lahm – Meat
Manoushe – A round baked bread spread with cheese, meat, zaatar, or tomato sauce
Baba Ganoush – Dip made with roasted eggplant, onion, tomato, garlic, lemon juice, olive oil, parsley

It is a wonderful 27deg predicted for Cape Town today. I'm not sure about you but when it's this hot I don't really want to eat heavy meals. I prefer something light yet filling. I came across an easy version for baked ribs from

I came across an easy version for baked ribs from http://ow.ly/kGfw50HrzLc and then I re-invented the recipe with my own flavours but still keeping the Asian inspiration. So whip out those finger bowls for the weekend. You’re gonna love getting your hands dirty on these.

Ingredients:
1 kg Lamb ribs cut to separate the ribs

Marinade:
1 tbsp honey
1 tbsp apricot jam
4 tbsp soy sauce
2 tbsp garlic and ginger paste
1-2 tbsp Thai chilli paste (or any chilli paste of choice)
2 tbsp brown sugar
2 tbsp white vinegar
1 tsp salt
1 tsp Sesame seeds

Method:
Line a large baking sheet with baking/parchment paper. Pre-heat oven to 180ºC/350ºF. Place the ribs in a large bowl. Combine all the marinade ingredients and mix well. Pour half the mixture over the ribs and mix it through. Leave to marinate for about an hour. Place ribs on baking sheet and brush on some more marinade. Place the sheet in the oven and allow to bake for 20-25 minutes then brush with the remaining marinade every 10 minutes or so turning them over each time. After 40 minutes, increase the temperature to 220ºC/430ºF and allow the ribs to caramelize. This should take another 20 minutes or so. Remove when they are sticky and have little burny bits just starting to form. Sprinkle with sesame seeds and serve.

The sun is out, the days are warm even when there is some rain. This Banana Chocolate Smoothie is the best summer cooler and its healthy.

Ingredients:
1 Frozen banana cut up. Did you know you can throw over ripe bananas straight into the freezer as is with their skin on. They keep beautifully.
1 small 100ml tub of fruit flavoured yoghurt. Mine was kiwi flavoured
Half a teaspoon of cinnamon
2 teaspoons cocoa powder
Half a cup of milk
Blitz all this up with a stick blender and voila!

These easy chicken koftes incorporate the warm flavour of paprika with the coolness of lemon and mint. It’s a great summer or winter dish. Serve it up with some flaky rotis or roll it up into a wrap with some salad. They will definitely be back for more.

Smokey Lemon Mint Chicken Koftes

Ingredients
Koftes:
500g Chicken mince
1/2 onion grated
1 tsp garlic paste or 2 cloves garlic crushed
2 Tb chopped fresh mint or 1 Tb dried mint
1 Tb smoked paprika
1 tsp ground cumin (jeera)
1/2 tsp chilli powder or more to taste
1 green chilli finely chopped
1 lemon zested
1 tsp salt
Ground black pepper to taste
Vegetable Oil for shallow frying

Gravy:
4 medium tomatoes, grated and peel discarded, or 1 410g tin of chopped tomatoes
1 tsp fine coriander
1 tsp fine cumin
1/2 tsp chilli powder
1/2 tsp garlic paste
1/2 cup yoghurt
1/2 cup water
salt to taste

Method Koftes:
Combine all ingredients except oil in a bowl. Mix through with your hand. Shape into golf ball-sized balls. Fry in shallow oil on medium heat. Don’t overcrowd pan. Turn frequently. Remove when lightly browned but not crisp.

Method Gravy:
Heat about 2 Tb oil in a wide saucepan on medium heat. Add spices and garlic and fry for a few seconds till aromatic. Add tomatoes and allow to cook till oil comes to the surface. Add yoghurt and water and simmer for 5-10 minutes and till slightly thickened. Add the koftes to the pan and allow to heat through before serving.
